Three Grades, Three Characters

These three teas map the range of white tea in one box. The Silver Needle is all bud, showing the honeyed sweetness and silky mouthfeel of the top grade. The White Peony, a bud with young leaves, sits between – more body than Silver Needle, more refinement than Shoumei. The Shoumei, made from more mature leaf and aged for a decade, brings the dark, sugarcane-like sweetness that only time gives. Brewing them one after another makes the differences obvious, which is the fastest way to learn how white tea varies. How to Use

Use about 4–5 g per 150 ml of hot water at around 90–95°C. Brew each sample separately and compare the three grades back to back to find your own preference. A good order is Silver Needle first, then White Peony, then the aged Shoumei, so the palate moves from light and delicate to rich and sweet. For a thermos, use the same leaves with more water and a longer rest. Keep the packs sealed when not in use so the samples stay fresh between sessions.
